Marrow & Tide is a wood-fire restaurant a block from the beach in Leucadia. We cook whole fish and whole animals over oak and almond wood, and we buy from the boats at Oceanside and the farms in the North County valleys. It is loud, it smells like smoke, and the bar opens early.
It was a surf shop in the fifties, and we kept the roll-up doors. On a good night they're open and the room runs straight out onto the 101. Forty-eight seats in the room, ten at the counter facing the hearth, twelve at the bar. The floor is concrete. The fire is oak and almond from an orchard up in Ramona, oak for heat and almond for the sweeter smoke, and it burns from the afternoon until the last table leaves. On a Saturday it is loud, it is warm, and everything and everyone smells like the fire. That isn't a problem we're working on. That's the room.

We cook whole animals and whole fish, and we cook them over the fire. The ribeye is dry-aged in our own cabinet for forty-eight days, and you can see it from the counter. The fish list is written that afternoon, not that season, because it depends on what the boats at Oceanside land. Vegetables come from Chino Farm and Sage Mountain Farm in the valleys behind us. There is no tasting menu and there won't be one. Order for the table, pass things around, argue over the last piece of branzino. If you'd rather not wait for a table, the bar opens at half past four every day but Monday, no reservation needed, and the oysters are already on ice.

Daniel Okafor was born in San Diego. He cooked at Saison in San Francisco and at Asador Etxebarri in the Basque Country, and then he came home. He opened Marrow & Tide in 2023 with what he'd saved and a loan from his sister. He's at the hearth most nights, and if you sit at the counter you'll hear him before you see him. Lucía Herrera runs the kitchen with him, Ben Tran runs the bar, and Priya Raman runs everything else, including the book. If something needs sorting out, it goes through her.
